Delish Comfort Foods!

Comfort foods aren’t just for colder weather. Usually when I think comfort food, I envision curling up in front of the fire place with a bowl of soup or an over-sized helping of cornbread, but as the warm weather starts to appear and we leave our winter moods behind, we need to break out our comfort dishes that give us a serotonin burst in the spring and summer months. 

 

Warm weather to me screams, easy recipes that uses as little heat as possible. My appetite decreases in warmer weather, so small and lite meals or snacks is the way to go. I think barbecues, picnics in fields and lazy afternoons and all of the delicious things you want to cook and eat during those times 

 

Spring and Summer Comfort Food

Fruit

Salad

Vegetables

Hot dogs

Burgers

Lemonade

Iced coffee 

 

My favorite comfort Food for summer isn’t a main dish. Although, I eat enough of it that it could be considered one for me. 

 

Creamy Cucumber Salad

Ingredients:

        Fresh cucumbers

  • Red onion
  • Sour cream
  • White vinegar
  • Fresh dill
  • Sugar
  • Salt
  • Garlic powder

 

  1. Combine ½ c. sour cream, 1 Tbsp. white vinegar, 1 Tbsp. minced fresh dill, 1 tsp. sugar, ½ tsp. salt, and ¼ tsp. garlic powder. Stir until combined.
  2. Add 3 c. thinly sliced peeled cucumbers and 1 c. thinly sliced red onion.
  3. Stir to combine; cover and chill for 2 hours.
